Cavalier Beer

Normally these things are supposed to start over a beer. Not while out walking the dog. Yet thus it was that the idea for Cavalier Brewing was first conceived. Homebrewer Steve Martin bumped into Heath Shirtcliffe in a dog park in Brunswick, got talking beer and one thing led to another. Soon the former was bringing the beers he was creating with fellow brewer Andrew Cronin to share while they walked, the latter was inspired and plans were hatched.

Those plans led to the forming of one of Australia's tiniest microbreweries: when Cavalier launched, they did so with a 100 litre brewery set up in the shed at the rear of Heath's home. They took their bow at a Fed Square Microbreweries Showcase in early 2011 with three beers - a Pale Ale, Brown and Wheat Beer - and within months found there was such demand it was time to start planning again.

Stage two saw them take their ingredients and recipes to different breweries around Victoria (although mostly to Prickly Moses in the Otway Ranges) so they could brew bigger batches while they designed and purchased a larger brewery. Heath, who "can sell ice to eskimos", continued to boost demand, finding homes in many top Melbourne restaurants as well as beer bars, the brewers kept designing new beers, such as a Pilsner, Imperial Stout and Imperial IPA, and all three looked for a new home for their brewery.

Late in 2012 they found it - in an industrial unit in Sunshine in Melbourne's West - and soon afterwards the all-important stainless steel arrived from China. Just over two years on from hand-labelling, hand-bottling and hand-capping their first beer in a Pascoe Vale shed, stage three of Cavalier was go, one that was kickstarted with a beer designed to represent Melbourne (the Black Coffee IPA brewed with Melbourne roaster Proud Mary for Good Beer Week 2013) and which has seen their home become a hub for other brewers too, with the likes of BrewCult, Killer Sprocket, Exit and Wolf of the Willows helping them fill their home by installing tanks of their own before, in many cases, these brewing companies have struck out on their own.

They're also involved in Cavalier Courage, the fundraising project for Motor Neuron Disease that was started when Dr Ian Davis approached them (as the brewers of his epiphany craft beer) to create a beer that's now sold to raise awareness and funds for the disease.

It's just as well their dogs got on...

Cavalier Imperial Stout

As soon as they had all the green lights lined up for their new brewery, the Cavalier guys didn't waste much time getting around to having a little fun. There was the Black Coffee IPA brewed with Melbourne roasters Proud Mary to represent Melbourne at Good Beer Week 2013 and the return of their Imperial Stout, a beer that, like their Imperial IPA, hasn't featured very often but has tended to leave the beer geeks gagging for more. It's easy to understand why, as within its dense 10 per cent body is ··· Read more

Cavalier Brown

You don't get too many Brown Ales brewed in Oz, but this has been a Cavalier staple from day one. A blend of chocolate and crystal malts offers up plenty of caramel and chocolate flavours, with a dry roasty finish making for a highly drinkable take on this pretty rare style. ··· Read more

Cavalier Pale Ale

Cavalier's biggest seller is this US inspired Pale Ale that doesn't hold back. It's crammed with plenty of New World hops, as you'll know as soon as it gets anywhere near your nose, balanced with a full-bodied malt backbone. The result is a mix of resiny tropical hop flavours, caramel malts and a finish that's pretty bitter - but not enough to stop you wanting another. ··· Read more

When they made their debut at the Fed Square Microbreweries Showcase in February 2011, different folks went away with a different favourite from the three beers they showed off. For The Crafty Pint, it was the Weizen, which was as full-bodied and flavoursome an Aussie take on the German style as we'd tasted. It's a beer that's only appeared intermittently since, but which was there from the off when they fired up their new brewery. Cavalier Brewing Fruit Punch IPA

Tapped May 5th, 2017
While Cavalier has released its Double IPA on occasion and a handful of one-off specialty IPAs over the years – black with coffee, Belgian, last year's debut of hyped hop Idaho 7 in Australia, for example – the Melbourne brewery hasn't put the same focus on the style as many of its peers. But that's set to change with the launch of a new IPA series. First up, they're getting involved in the haze craze via New England style IPA Fruit Punch. Cavalier Brewing Cherry Sour

Tapped January 15th, 2017
Cavalier's Cherry Sour is a beer that first appeared as a one-off a couple of years back, one that we'll admit didn't hit the mark here at Crafty Towers, but which proved popular enough to return – and, when it did so, arrived in much improved (to these taste buds, at least) form too. And now it's become an annual summer release for the Melbourne brewery, one that tends to disappear faster than pretty much anything else they put out. It's not hard to see why it moves fast at this time of year either. ··· Read more

Cavalier & Catfish Double Life IIPA

Tapped December 8th, 2016
Each year, for The Catfish's birthday bash – an occasion that typically involves a multi-venue poker crawl and much fun – Cavalier Brewing has created a new beer. This year was no different, with the Fitzroy venue's third birthday being the debut for the Double Life IIPA. It's a beer with roots in the first birthday too, although those roots remain shrouded in mystery: something to do with a very long night and the bar's house catfish, Muddy Waters, revealing a hitherto unknown dark side. The trio behind Cavalier Brewing made their very first appearance at a Fed Square Microbrewery Showcase back in 2011. They were still up at 1am the night before carbonating kegs of the first three beers produced on their 100 litre kit. These were a pale ale, a brown ale and a hefeweizen. They rocked up late to the event, where they poured beers from a series of 20 litre homebrew kegs – and ended up leaving with the Best New Brewery and Best Beer titles. Cavalier Brewing Peach XPA

Tapped October 16th, 2016
A quirky one, this from Cavalier. It's their latest venue collaboration, carried out with Melbourne's Belgian Beer Café Eureka. Given it was done in unison with a bar with Belgian beers as a core part of its offering, there's a Belgian yeast at play. And, given it comes with the tag "XPA" – or extra pale ale – there would have been a fair amount of hops added along the way. Yet if you're thinking you're going to get a hoppy Belgian style golden ale, think again. Why? Because it's the ··· Read more

The increasing regularity with which brewers are faced with hop shortages is well documented as demand for both craft beer and hoppier styles increases globally. In The Hitchhiker's Guide To The Galaxy, the Pan Galactic Gargle Blaster is described as the "Best Drink In Existence" and similar to "having your brains smashed in by a slice of lemon wrapped round a large gold brick". Much as we'd love to, we don't always get to sample every single beer released in Australia before telling you about it. Why release one three per cent ABV beer when you can release two at the same time? Especially when you'd struggle to find two beers more different in every other way.
