Barbecue and beer have always gone well together, but coinciding with the rise of better beer barbecuing has gone through something of a renaissance of its own. Nowadays it’s less about mystery meat and more pulled pork and provenance.
This rise of BBQ and beer will be ably demonstrated at the Thristy Crow brewery in Wagga Wagga this weekend where they’re putting on a genuine feast of a festival: Hops & Chops.
Not only will it feature 20 beers you won’t find anywhere else, but all manner of local meat and sauce producers will be coming in to wow you with their wares by way of the following rather epic-sounding platters:
- Lawsy’s Big Boy ($55) – Kansas City pork ribs half rack + Texas-style beef ribs + spit roasted lamb soaked in red wine & garlic + hickory-smoked pulled pork w/ Crowley’s Smoke & Fire + oak smoked beef brisket with Crowley’s BBQ’d onion sauce + Knights crafted smoked pork sausage + onion rings + apple mint slaw + pickles + corn bread
- Pleased To Meat You ($35) – Texas-style beef rib + Spit roasted lamb soaked in red wine & garlic + hickory-smoked pulled pork w/ Crowley’s Smoke & Fire + oak smoked beef brisket with Crowley’s BBQ’d onion sauce + Knights crafted smoked pork sausage + onion rings + apple mint slaw + pickles + corn bread
- Loch & Loaded ($30) – Spit roasted lamb soaked in red wine & garlic + hickory-smoked pulled pork w/ Crowley’s Smoke & Fire + hickory smoked buffalo wings with blue chess dip + Knights crafted smoked pork sausage + onion rings + apple mint slaw + pickles + corn bread
- Here For The Music ($10) – Knights crafted smoked pork (or vege) sausage, bun & chili sauce
In regards to the latter point, there will be plenty of music to keep the good vibes coming, specifically from Romi, Burning Beards, Dane K and Ben Tierney.
The fest runs from midday to 8pm and you can grab a ticket at the brewery bar.
