Thunder Road Brewing is looking to take on a number of new brewers. The Melbourne brewery, which was named Australian International Beer Awards champion in 2014 and 2015, brews a core range of approachable craft ales and lagers and also operates a barrel program and undertakes regular international collaborations.

JOB DESCRIPTION: SENIOR & LEAD BREWERS

Thunder Road Brewing Co is located in Brunswick, Melbourne, Australia, operating a science focused, urban 35 hectolitre brewery operation and small pub style pilot brewing system. We are the AIBA Champion Medium Size Australian Brewery of 2014 and 2015.

We produce bulk keg and can beer in Australia as well as packaged bottle beer outside Australia for export.

Due to significant growth and new projects, plus our forthcoming public tap room opening, we need more brewers and team leaders for both our manufacturing and pub brewing facility. We have senior and lead brewer roles available for professional brewers, immediate start.

Role Scope:

  • The lead brewer supervises the operation of both our 35 hectolitre semi-automated brewing systems including milling, mashing, lautering, boiling, hop additions, whirlpool, and wort cooling. 
  • The lead brewer is responsible for maintaining the timeliness, accuracy, and consistency of all elements of production brewing for their assigned shift.  
  • The lead brewer serves as a Team (Shift) Leader, and provides supervision for respective brewers. The Lead brewer is also responsible for successfully meeting targeted production metrics. 
  • The Lead Brewer maintains similar hands-on responsibilities as a brewer position. Those include pre- and post-cleaning and sanitation of all transfer lines and vessels, as well as cellar tasks such as yeast pitching, filtration, beer transfers, tank CIP, parts and hose maintenance, filling kegs.  
  • The Lead Brewer works eight hour shifts, and work may include 24/7. The Lead Brewer is expected to be punctual, self-motivated, and to lead by example.  
  • The Lead Brewer is responsible for maintaining a healthy and positive team environment for their shift. The Lead Brewer is also responsible for coordinating with other brewers, and maintains shift cohesiveness with other teams.  

Daily Duties, Functions, Responsibilities:

  • Sets team goals, and works closely with other Lead Brewers to achieve comprehensive production goals. 
  • Trains and performance manages other brewers, to include discipline, recognition, evaluations, etc.
  • Authors standard operating procedures and guidelines (SOP/SOG), and coordinates with fellow Lead Brewers to ensure cohesiveness. 
  • Aseptic tank sampling when deemed necessary by the Quality Assurance Department.
  • Ensures shift execution of SOP/SOG.
  • Follow all safety procedures.
  • Ensures accurate inventory and quality management of raw materials and chemicals.
  • Periodic handling of hazardous chemicals.
  • Guarantees the keeping of accurate daily production records per company and legal requirements.
  • Oversees the shift maintenance of all beer production areas including equipment: mill room, brewhouse, fermentation, and filtration, spent grain area, bulk grain and grain storage area, as well as all walkways and driveways around or leading too brewhouse and cellar).
  • Assist maintenance technicians with equipment maintenance and repairs.
  • Follow daily and weekly cleaning schedules to maintain a clean working environment.
  • Attend and occasionally facilitate production meetings and contribute to product improvement.
  • Operate and monitor electronic and computerised brew systems. 
  • Other duties as assigned. 

Skill Requirements:

  • Formal International Brewing qualifications eg IBD and / or science / engineering qualifications with experience in brewing. 
  • Experienced in brewing three years-plus would be an advantage, including plant automation and project management. 
  • Ability to work in a team environment, undertake shift brewing work and manage people well is a requirement also.
  • You will have a commitment to beer quality and can support the team with ongoing quality conformance and plant hygiene including HACCP / Food safety certification maintenance.
