Backed by some high profile names, Brick Lane Brewing Co is set to become one of the largest new breweries to open in Australia in recent years. To help get the new brewery ready – and ensure smooth sailing once it’s open - Brick Lane has two roles that need filling.

JOB DESCRIPTION: MAINTENANCE AND ENGINEERING MANAGER

Brick Lane Brewing Co is new, proudly independent and on a mission to brew the highest quality beers to taste the way beer ought to taste. We’ve dipped our toes into the market with our Pale and Lager and are preparing to ramp up with the commissioning of our new brewery in Melbourne.

And what a brewery it is; we have invested in a purpose-built building and a bespoke 5 vessel Braukon brewhouse from Germany, which will feed state of the art Comac and Krones packaging lines. We’ve got the gear, now we’re ready for the team to join us on the journey.

You will be joining a group with deep experience in the brewing industry and backed by an eclectic group of supporters across beer, wine, hospitality, sports and media.

The first role we’re looking to fill is the Maintenance and Engineering Manager, who will work directly with our Head Brewer, Jon Seltin. The role is a key role in the business (as are all roles!) and will be heavily involved in the installation and commissioning process for the brewery.

Our Maintenance and Engineering Manager will be able to operate with autonomy as well as integrate into the team based in the Melbourne brewery and the wider business. All of us at Brick Lane aim to be uncomplicated and down to earth in our approach to our roles, but uncompromising in our commitment to our customers, the beer, the business and the team.

Key parts of the role:

  • Asset care and maintenance, expansion and continual improvement of Brick Lane’s new world-class brewing facility
  • Develop and implement all aspects of Brick Lane’s maintenance and engineering programs to ensure high equipment availability, reliability, safety and finished product quality
  • Establish and fit out the brewery workshop, set up and administer the Computerised Maintenance Management System (CMMS), drive operator maintenance training and work on expansion/process innovation projects
  • This position will be able to help shape the maintenance and engineering operation of a true greenfield site and will be involved in construction, commissioning, optimisation and ongoing maintenance and continual improvement of utilities, production and packaging equipment throughout the plant.

Requirements:

  • Trade qualification in engineering – mechanical trade or electrical trade
  • Restricted electrical licence highly desirable
  • Current Drivers Licence, with Forklift licence desirable
  • +4 years’ experience in food/beverage maintenance environments
  • Mechanical/electrical maintenance and operations experience with automated packaging lines
  • Experience with maintenance of high speed isobaric glass bottle fillers, can fillers and seamers
  • CMMS and maintenance planning systems
  • Sanitary welding experience highly desirable
  • Electrical trades experience (motors, drives, wiring, field instrumentation, PLCs) desirable
  • Some experience with PLC programming (Siemens S7, TIA portal) desirable
  • Knowledge of GMP, HACCP, lean manufacturing /Six Sigma principals

JOB DESCRIPTION: QUALITY MANAGER 

This new position will be responsible for the development and implementation of Brick Lane’s quality, sensory, lab-based yeast propagation and food safety programs. The quality manager will be involved from day one in the development of Brick Lane’s quality manual, develop our food safety programs for accreditation, and set up our internal physical/chemical, microbiological and sensory laboratories.  

This position will develop and manage all raw material, in-process and finished product quality checks, train and administer the sensory panel program, and liaise with each manufacturing department, providing training to operators and brewers to ensure quality is at the core of everything Brick Lane does.  

Key parts of the role:

  • Develop and Implement all QA/QC and food safety related programs, including coordinating internal and external audits
  • Maintaining external accreditation for food safety systems
  • Establish and fit out the Brick Lane laboratories (physical/chemical, micro and sensory labs)
  • Conduct physical/chemical/microbiological and sensory testing on raw materials, in process samples, utilities, finished beer, environmental testing and trade waste
  • Develop statistical process control tools, specification control limits and decision trees from raw material intake to finished beer to enable rapid decision making throughout the brewery
  • Develop and implement lab quality assurance systems
  • Develop and lead the sensory program, including taster training and validation, statistical analysis, and feedback into production

Requirements:

  • A bachelor’s degree in microbiology, fermentation or food science, organic chemistry, or related field, and/or a technical brewing qualification.
  • Advanced degree or equivalent experience desirable
  • Food safety qualifications or experience highly desirable
  • Significant experience in a QA/QC role in food and beverage, with strong working knowledge of beer QA processes
  • Practical experience in routine lab work, including aseptic technique and media preparation, yeast propagation, microscopy, spectrophotometry, chemical analysis and familiarity with modern lab analytical equipment
  • Experience in developing and implementing HACCP or other food safety systems
  • Knowledge of GMP/GLP, lean manufacturing/Six Sigma principals\
  • Experience with sensory analysis, preferably with formal sensory training
  • Strong statistics and statistical process control 
  • Process validation and quality assurance experience
  • A genuine passion for beer and quality
