It’s been a little while since Hop Nation’s exploration of some favourite US hops but there’s no better place to get back into a series than with a classic. Simcoe is certainly such a hop too thanks to how many IPAs it's stared in, particularly those of a more classic ilk in the days before the tropical takeover and where pine, spice and bitter citrus ruled.
Simcoe IPA certainly has all of those in spade, with the beer taking you back to a time of intense resin, pine needles and grapefruit. You'll also find it to be super lean and bitter enough to give the palate a bit of a shock to fully refresh between each sip.
