Bridge Road aren’t slowing down on their ever-changing roster of IPAs and with autumn underway, the Victorian brewers have turned to two distinct approaches the the style. As the name alludes, Dip Hop Cali IPA combines a modern-but-not-super-modern hopping technique (you can read all about it here) and the leaner, dry, and less bitter approach to West Coast IPAs (you can find it here).
As a result, it’s a crisp, clean, and gently bitter beer that truly lets Mosaic shine as Bridge Road utilise the American hop in Incognito form. It’s certainly an expressive use of that variety, with Mosaic coming across in many, many forms. When it comes to citrus, that comes across like freshly-squeezed juice that combines blood orange and mandarin while stone fruit is more akin to biting into a nectarine as mango is both a taste of the tropical freshness and a little more on the sweeter, lolly-like side.
