Of all the breweries to appear in Victoria in the past couple of years, few come with as colourful a backstory as Dollar Bill.

The family-run, Ballarat-based operation focuses on mixed and wild fermentation, fruit beers and barrels – creating both beer and cider –and you can learn more about Fiona and Ed Nolle's mission here.  

Right now, they have a barrel room / cellar door taking shape outside the regional city but, before that opens its doors, there's a chance to get up close with them at Richmond's Uitgang Bar

The bar will be pouring four beers and two ciders for your drinking pleasure, all of which sound rather unique.

On tap:

  • Grand Cru 2018: Pseudo Lambic aged two years – bretty and sour
  • Ballafornia Blend: Base sour blend, mix of aged sour saison and young wild fermented ale
  • Douge De Bordeaux: Wild Ferment on Cab Franc and Cab Sav, Merlot & Malbec aged two years
  • Kriek: Base sour blend on fresh sour Morello cherries from the Mornington Peninsula
  • Smith & Cripps cider: Wild fermented from Australian grown Cripps pink lady apples, Granny Smith apples, Packham pears and New World hops
  • Strawberry & lime Cider: Smith & Cripps rested on fresh strawberries and lime zest

It's a free event but, if you'd like ensure you get to try each tipple, $40 dollars will get you six 150ml tastings.
