Sydney's Brix Distillers bring a modern approach to Australian rum through their use of local ingredients and a keen interest in exploration.

Job Description: Distiller

Through our combined distillery, cellar door and hospitality offering Brix is helping to raise the profile of the rum category here in Australia through the use of all local ingredients and a world class custom made production facility.

We are looking for an experienced distiller to join our team in creating high quality Aussie rum and help bring molasses to the masses!

About the role

Reporting directly to the head distiller, you will perform the full range of tasks required to produce all of our products as well as be a vibrant and enthusiastic representative of the brand. No task is too big or too small: responsible for daily production including mashes, fermentations, distillations, barrelling, proofing, and bottling. The distiller is responsible for maintaining the cleanliness of the distillery and equipment. In addition the distiller is responsible for keeping daily logs of production activity as required by the ATO. The distiller will also assist in creating and adhering to production schedules, ordering supplies and performing scheduled equipment maintenance.

Key Responsibilities

  • Closely work on all production phases and activities related to distilling current and future portfolio of spirits, including:
  • Open distillery
  • Mashing and Distilling
  • Weekly stocktake of consumables 
  • Manage spice infusions 
  • Manage wastewater 
  • Bulk spirit transfers and preparing bulk spirit for transport
  • Considered and careful Proofing and Blending
  • Barrelling and Bottling
  • General distillery maintenance and cleaning
  • Pack-down of distillery
  • Help develop and adhere to a production schedule
  • Maintain barrelled spirits and un-aged spirits warehousing processes
  • Be exacting with data entry and record keeping for inventory management on computer software programs (currently Excel and Unleashed)
  • Work on warehousing activities related to shipping and receiving, including forklift operation, and maintaining detailed records of inspections of incoming and outgoing goods
  • Adhere to the specified recipes, proof, compliance and inventory control
  • Occasionally perform analysis during fermentation in order to determine Brix, PH and other associated metrics involved with ensuring a quality result as directed
  • Regularly inspect and perform proper preventive maintenance procedures on stills, pumps, agitators, and all related equipment.
  • Follow Standard Operating Procedures throughout distillery and maintain quality, sanitary, storage, inventory and production programs as directed
  • Monitor Quality via QA/QC procedures
  • Act in a professional and logical manner to unexpected issues or critical activities that may arise during normal operations
  • Participate in and conduct when necessary consumer and staff training
  • Conduct and record R&D projects inline with Brix business objectives

Physical Demands

The employee is required to stand for long periods as well as walk, bend and stoop. The position requires working taste buds, ability to smell, feel with fingers and visually inspect, including close and distance vision. The position requires the ability to use arms, hands and manipulate fingers to reach.

Other Duties

In addition to distilling, the employee will be expected to engage with consumers by educating and giving tours and building relationships with local growers and business owners.

  • Welcome and engage guests as they arrive
  • Educate guests about the Distillery and its products and methods
  • Be an advocate for craft distilling (specifically craft rum)
  • Conduct tours - We will train on the material, but we need you to be able to: Speak in front of a small group.
  • Represent Brix as an ambassador in the community at trade shows and consumer events
  • Meet with, build relationships and discuss future plans with local growers and other potential business collaborations.

Qualification and Education Requirements

  • Minimum two years experience in distilling, wine making or brewing
  • Strong math skills and verbal and written communication skills
  • Strong organisational and planning skills with constant attention to detail

Qualification and Education Preferences (Not essential)

  • Degree/diploma/accreditation in chemical engineering, fermentation sciences, wine, brewing or distillation
  • Forklift experience
  • HR Truck license
