Since late in 2015, the family behind Bad Shepherd has made it their mission to lead drinkers into temptation via good beer. If you think you've got what it takes to make that beer, currently they're looking to hire a senior brewer.

JOB DESCRIPTION: Senior Brewer

We are Bad Shepherd Brewing Co., an independent microbrewery and BBQ smokehouse located in the Bayside suburb of Cheltenham, Victoria.  We’re here to make beer that is tasty, interesting and fulfilling. That’s the way beer should be.

To that end, we are seeking a passionate and creative brewer to lead all brewing, packaging and cellaring processes in accordance with our operations schedule.

PRIMARY RESPONSIBILITIES

Safety

  • Develop, maintain and adhere to safety procedures in brewery operations
  • Communicate safety policies to all employees and stakeholders including induction procedures where warranted

Team Leadership / Resource Scheduling

  • Assign tasks and resources to operations team to fulfil brewery schedule requirements
  • Input into brewery schedule development led by Managing Director
  • Clearly communicate schedule to operations team on timely basis

Stock Management

  • Ensure timely and regular stocktakes and accurate system representation of stock levels
  • Execute movement and/or storage of finished goods stock including organizing third party logistics lifts as required
  • Receive raw and packaging material stock as ordered and check to ensure accuracy and quality of receipted goods

New Product Development

  • Develop new beer recipes including keeping abreast of market trends and brewing processes
  • Complete test batches as required
  • Lead ancillary processes including barrel ageing

Lead packaging processes:

  • Lead and oversee bottling line operation including:
  • Labelling, bottle filling and palletizing of finished product o Manage bottling line staff during shift including strict adherence to safety policies o Manage set up of bottler including sanitization procedures o Manage packaging area clean up including bottler CIP
  • Lead and oversee canning line operation in conjunction with mobile canning external company including:
  • Manage canning line set up and post canning clean up o Manage Bad Shepherd staff packing and palletizing cartons
  • Manage stock storage of packaged product post bottling/canning process
  • Clean and fill kegs as required

Cellaring of beer:

  • Complete gravity, pH and temperature measurements and log activity
  • Carbonate beers
  • Yeast off tanks
  • Dry hopping

Manage brewing processes:

  • Follow recipe and directions as required
  • Clean in place and sanitize fermenter and/or brewhouse and heat exchanger
  • Pitch yeast in accordance with recipe
  • Log all activity as required

Maintenance and Quality Assurance Management:

  • Establish and communicate Standard Operating Procedures for brewing and packaging
  • Maintain clean brewery area
  • Maintenance tasks as identified ongoing
  • Identify productivity opportunities and communicate to Managing Director
  • Implement and manage brewery lab including: o Yeast cell counts / viability assessment o Yeast brink and yeast repitching schedule o Sensory reviews of beers with core management team

Growth / Green Fields

  • Assist Managing Director with review of capital options to increase capacity and fulfil demand needs including but not limited to:
  • Sourcing of a new canner, labeller and dissolved oxygen meter o Review of current processes to optimize throughput
