When the Illawarra Brewery bar opposite Wollongong's main beach got a facelift recently, including adding a bunch more guest craft beer taps, they also made a decision to hand over some control of the kitchen to the team at 2 Smoking Barrels.
The latter has been finding plenty of favour with people from all around the South Coast for their US-inspired, pit-smoked meats and, as part of kitting out the brewery bar, they ordered a brand new 850kg smoker.
It's arrived, it's been getting thoroughly tested and it's going to be ready to serve up treats at its launch on Father's Day.
They'll be pulling out some big ol' hunks of meat and there'll be a typically comprehensive selection of Illawarra beers to pair it all with.
