Hawkes Brewing Co launched in 2017 in partnership Australia's former Prime Minister Bob Hawke, with royalties from the beers donated to Landcare Australia.
The brewing company has found a home in Sydney's inner west and, before it opens next year, the team is looking to take on a new head brewer.

It's not every day you get to brew a beer especially for Bob Hawke. So when the founders of Hawke's asked me to do just that, it was a no-brainer. That was over 3 years ago and since then, I've been writing the recipes and overseeing the contract brewing of our first four releases – Hawke's Lager, Hawke's Patio Pale, Hawke’s Underdog Session Lager and a soon-to-be released IPA for this summer.
Now, it’s time to hand over the reins, as Hawke’s takes the next step with the 2021 opening of its own full scale brewery and taproom. A home where we can take control of our production, while continuing to build on our portfolio of brews. As such, we’ve secured a marquee property in the inner west of Sydney to help bring this dream to fruition. And we’re now extremely excited to be opening up the role of full-time Head Brewer.
The role will start with joining the management team in building the brewery, providing crucial early input before spearheading day-to-day brewery operations as well as the continued development of the Hawke’s portfolio for both wholesale trading and inside the tap room.
The successful candidate will be joining a growing team of industry professionals, including our Chairman, Rob Murray (former CEO of Lion) and Stavros Yiannoukas, National Sales Director (previously at Young Henrys). My role is at board level but I will always be there to support, swap ideas and of course, taste exciting new beers. In saying this, the successful candidate will be very much in the driving seat and I’m excited to see what you achieve with the team, as we continue to grow Hawke’s into the national beer brand that we promised Bob back in 2016.

About the role:
We’re seeking an experienced Head Brewer to not only help us build our forever home, but also assemble their own team within it. You will help set the tone of the brewery, literally from the ground up, setting the foundation to develop and refine our range of high-quality beers, while adding styles and flavours that everyone can enjoy. You are a leader, a quality control fanatic, a product development genius, and a safety guru. You are a consummate professional with a positive outlook, common sense, commercial nous and problem solving skills. Underlying all of this, you have an authentic desire to seek out, embrace and implement more sustainable ways to run a brewery that limits its impact on the environment.
Key Tasks:
- Be accountable for the safety of staff and customers throughout brewing production areas, and establish a “safety first” culture.
- Plan, schedule and implement the brewing and packaging processes to meet provided forecasts.
- Prioritise quality of all released beers through brewing process, a quality control program and culture of the team.
- Help lead the mission to build and operate a brewery that limits its impact on the environment by implementing more sustainable ways to use energy, treat waste and maximise all-round production efficiencies.
- Manage a combination of full time and casual brewing staff as required to meet production.
- Manage all aspects of brewing stock, including raw materials, packaging and machinery.
- Be accountable for achieving cost targets and expense budgets as agreed with management.
- Work with sales staff and supply chain partners to ensure Hawke’s beers are always delivered in perfect condition.
- Develop and refine our existing core range and deliver limited releases,seasonal and additional core range beers.
- Manage legalities with both the ATO and council relevant to brewing production.
- Ensure strong data focus on all brewing and quality parameters through selected software and routinely review data with management for continuous improvement.
- Establish and uphold cleaning and maintenance schedules for all brewing areas and equipment.
- Act as an ambassador for Hawke’s Brewing Co at all times, across an array of customer engagement pieces such as beer education, dinners and masterclasses, yet also embodying true values of mateship, such as being susceptible to magnetic pull of a sizzling barbecue and a deep need to grab the tongs and turn a democracy sausage.
Skills and Experience required:
The ideal candidate will have a minimum of 5 years’ experience in a commercial brewing environment and have an IBD Diploma in Brewing or similar brewing qualification.
This is a full-time permanent position that will involve after hours and weekend work and public holidays on some occasions, but we actively encourage everyone to find their own work life balance.
