Job Description: Quality Brewer

Ballistic Beer Co in Brisbane are looking for an awesome person to join the ranks in the position of Quality Brewer. We are a fast growing independent brewery looking to develop and run a world class quality program with the help of a brewer with experience in both operations and quality.

The ideal candidate will have worked in breweries in both the brewing and quality departments. They will be able to mash in, plate micro samples, wash kegs, count yeast cells, scrub the floor and write a quality manual. Plus be prepared to do all of the above.

Scope of Role: 

The role of Quality Brewer will encompass three main responsibilities. The development and ongoing management of a company wide quality program, performance of the day to day quality testing and reporting and brewery operational tasks as required. The role will initially include 16 hours per week of brewery operational work and will remain so until it is deemed by the Head Brewer and Managing Director that there is sufficient quality work for a full time position. The Quality Brewer will report directly to the Head Brewer.

Program Development & Management

  • Develop Quality Manual
    • Quality Policy
    • Quality Governance
    • Finished Product Specifications
    • Quality Control & Assurance Plans
    • Recall, Traceability & Consumer Complaint Log
    • Master Sanitation Schedule
    • Risk Assessment & Control Points
  • Establish Sensory Training Program
  • Establish Sensory Program
  • Implement in house Micro Testing & Reporting Program under agreed regime
  • Install and commission all Lab Instruments
  • Write SOPs for all Lab Instruments & Testing
  • Train all Brewery Staff on Lab SOPs
  • Develop & Implement Force Age/Optimal Shelf Life Program
  • Create Retention Sample Program
  • Develop Key Quality Metrics
  • Develop Weekly Reporting Process

Quality Testing & Reporting

  • Perform and oversee testing and record keeping of:
    • CO2 and DO (in-tank and in-pack)
    • Gravity samples
    • pH
    • Micro testing
    • ABV
    • Yeast counts & viabilities
    • Can seam testing
  • Beer force age testing (sensory and measured analysis)
  • Beer Best Before Date optimisation
  • Regular service and calibration of all quality instruments

Brewery Operational Tasks

  • Wort production
  • Keg washing and filling
  • Packaging line assistance
  • CIP of fermenters and BBT’s
  • Filtration
  • Dry-Hopping
  • Yeast cropping, storage and pitching
