KAIJU! Beer are based in Melbourne's south-east where their impressive brewery is known for producing an eclectic mix of beers.

Recently that brewery has undergone a significant expansion and as a result, they're looking to hire a new brewer. 


Job Description: Innovation and Production Brewer

South East Brewing Company, better known as KAIJU! Beer, is a well regarded independent brewery based in the South Eastern suburbs of Melbourne. 

The team at SEBC has undertaken significant capital works at the brewery this year by installing a 50hL brewhouse, adding new fermenters and our Krones canning line will be operational shortly. This is in addition to our taproom and pilot brewery in Huntingdale which is scheduled to open later this year.

The Role:

Reporting to the Head of Production, this role will see you performing the following tasks, in line with our Quality Standards document:

  • Performing all aspects of wort production, cellar, and filtration operations.
  • Development of innovative and cutting-edge recipes for brewed beverages
  • Recording & reporting brewing quality and production data in accordance with KAIJU! brewing/ manufacturing standards
  • Actively participating in continuous improvement activities across safety, quality and productivity.
  • Tank CIP, preparation and general cellar work
  • Maintain inventory and stock control
  • Clean and maintain production areas
  • Receiving and dispatching goods
  • Maintaining a clean and safe working environment including preventative maintenance
  • Perform other duties as assigned

Who you are:

  • Minimum two years experience in wort production 
  • IBD or equivalent qualification highly regarded
  • Comfortable working collaboratively and autonomously
  • Committed to achieving shared goals
  • Strong problem solving and troubleshooting skills.

Mandatory Requirements:

  • Hold a current Forklift License
  • Hold a current Drivers License 
  • IBD Diploma equivalent, qualification or experience that can be clearly demonstrated through references
  • Demonstrated experience in a medium to high volume operation
  • Demonstrated experience in recipe development
  • Full Australian working rights
