There’s been a tendency over the years for hoppy beers to get paler and paler to the point at which malt really takes a backseat. Not in the case of Dances With Hops, however: this is a faithful reminder of why both can matter in an IPA.
The core range IPA from Shambles Brewery features a combination of five hops that appear with some intensity as they layer on grapefruit, pine, earthy and floral qualities, before turning towards marmalade. But as those hops dance, the malt does too, adding a slice of caramel before a firm and lasting bitterness hits the back of a palate.
