SixTwelve continue to expand their brand, taking small steps and gaining admirers along the way: solidifying their core range; branching out into some cracking limited and seasonals; collaborating with local companies.
Now, in July 2024, they're taking the label to another level with the first release from a barrel fermentation series under the Tall Order Series banner. The barrel-fermented blueberry saison started out with a traditional saison base before being transferred into former Adelaide Hills shiraz and shiraz-grenache barrels, with added blueberry skins from the blueberry liqueur produced at their on-site distillery, then fermented with Belle Saison yeast.
The wine barrels add immense complexity, giving the impression the SixTwelve team are seasoned barrel operators. Starting with classic saison flavours of straw with a touch of caramel and typical yeast esters. There is a measured acidity adding balance alongside vanilla, a fair whack of woody oak, a smidgeon of clove and even hints of cherry.
The cherry also comes in appearance wise, adding a pinkish hue. As the beer warms, the oak amps up even more, with the blueberries muted but adding to the complexity in a beer that finishes quite dry with a savoury bite.
