Jetty Road Brewery are located in Dromana on the ever-popular Mornington Peninsula with their brewpub as much a hospitality experience as it is a production site.

Job Description: Head Chef

An exciting opportunity has arisen to join the Jetty Road Brewery family in the role of Head Chef in our flagship venue on the Mornington Peninsula. Jetty Road is a high-volume craft brewery based in Dromana with a focus on creating an experience to exceed guest expectations. We are open five days a week from Wednesday - Sunday with a fully functioning kitchen and a menu focusing on sharing style dishes as well as an emphasis on local produce. Showcasing our onsite brewery, we have a passion for pouring Jetty Road beers and pairing with an exciting and locally supplied menu. Delivering our passion, knowledge, and creating the full venue experience is our prime focus.

As the head chef, you will be working closely with the venue manager and general manager to ensure high service standards and ongoing innovation within the venue. The role itself is a hands-on role, whilst managing and leading both day to day and the BOH operations. A hard work ethic, passion for food, flavour and the right attitude are a focus within this role. With strong leadership skills and culinary passion skills being a close second. We believe in investing in the team at JR and promoting a positive culture to continue to grow and develop with ongoing training in place to support you.

Jetty Road Brewery is part of a family of partners within Mighty Craft Limited that includes: Adelaide Hills, K-Booch Alcoholic Kombucha, Nosh Spritz, Sparkke Beverage Co, Sauce Brewing Co, Ballistic Beer Co, Slipstream Brewing Co, FogHorn Brewery, Green Ant Beverages, Kangaroo Island Spirits and Brogans Way.

Our Venue 

This venue is positioned in amongst the exciting hub of local craft food and beverage in the Dromana Industrial Estate. It's a real favourite with locals and tourists to the area within in the stunning location of the Mornington Peninsula! The venue is known for its awesome entertainment, great food and fun family vibe.

The Position

As the head chef you will be working closely with the venue manager and general manager to ensure high service standards, and ongoing innovation within the venue. The role itself is a hands-on role, whilst managing and leading both day to day and the Back of House operations. A strong leader with a hard work ethic and a passion for food are a focus within this role. We believe in investing in the team at Jetty Road and promoting a positive culture to continue to grow and develop with ongoing training.

  • Reporting to the General Manager, overseeing kitchen operations, financial management, team leadership, stakeholder and customer relations.
  • Create a cohesive and united vision whilst focusing primarily on kitchen operations, functions, partnering with the local community and defining the customer experience.
  • Ensure rigorous adherence to compliance and safety standards for staff and customers.
  • Recruit, induct and train a passionate kitchen team.
  • Manage food, waste and labour costs in relation to revenue and implement strategies to achieve business targets.
  • Foster a culture of customer engagement, retention and strong loyalty by leading innovative and targeted themes and initiatives, which maintain venue popularity year-round.
  • Manage and coordinate a calendar of functions and events, always representing Jetty Road in a professional manner
  • Engage all internal and external stakeholders – staff, contractors, suppliers, invoicing to ensure all operations are delivered to exact specification
  • Maintain high levels of communication between the FOH operations and kitchen team.
  • Complete all role related administration as required

About you: 

  • Highly organised, with an unwavering focus on occupational health & safety
  • A passionate leader and enthusiastic food lover.
  • Energy, enthusiasm, positivity - and bucket loads of it!
  • Proven management experience in charge of a busy kitchen
  • Extensive event and planning experience within the catering or hospitality industry
  • Previous experience in managing
  • Accredited Food Safety Supervisor
  • Financial acumen with regard to forecasting and operations management
  • Time management and ability to prioritise tasks
  • Strong communication, negotiation and relationship skills
  • Competent IT Skills 

Candidate Profile:

  • Permanent visa holder and Australian resident
  • 3-5+ years in the industry
  • A highly structured and organised approach, managing multiple tasks simultaneously
  • Impeccable presentation and hygiene standards
  • Flexible availability to suit business needs.
  • A solid understanding of the financial aspects of running a successful kitchen
  • The ability to effectively run a kitchen and associated function spaces simultaneously with KPI’s, wage and food cost management
  • Ability to motivate and lead the team by example
  • Ability to build a strong productive team
