When owner and head brewer Sean was sitting with the Seeker Brewing crew at the AIBAs, they got to talking about beer recipe design. It came up that when one of the Seeker brewers had the idea to use some newfangled hop in a beer, another brewer chipped in with: “Yeah, but put in a little bit of Citra for safety.”
Sean was chuffed with this phrase, and jumped on it as the name for a beer. It only made sense to make that beer in collaboration with Seeker, so Ben Boorer joined Sean at Future Magic to brew this oat cream IPA with a huge marshmallowy head.
Despite the way the phrase originally came into being, this beer doesn’t just use a little Citra for safety; it’s all Citra, all the way.* It brings orange zest and mandarin, and a surprising amount of mango and other tropicals for a hop that contains 66 percent of the letters of ‘citrus’. The lactose pulls it weight by drawing out more and more sweet fruit - I found a little peach and lychee showed up in the finish.
