The Shapeshifter team are always looking to keep things new and exciting with their limited releases, often launching beers in pairs. Case in point: Low And Slow and Fast And Furious, designed to show off different yeast variants within hopped-up hazy IPA twins. Each uses the same malt and trio of NZ hops – it's just the choice of yeast changing the profile of the beer.
Low And Slow uses Ferveo’s English Ale 11 yeast, fermented at the lower temperature of the two. Even though this yeast attenuated more than its companion, a touch more perceived sweetness lingers. The hop characters are incredibly clean, throwing loads of juicy pineapple, some candied peach and a smidge of lime from its medium-full body, paired with a low bitterness.
On the other side, Fast And Furious was fermented with Ferveo’s Wildly Tropical Kveik style yeast at 33C – the sort of fermentation that not too long ago would have been thought insane by most brewers. Once again, the hop notes are very clean and juicy. The pineapple is still quite prominent but this time the lime features more along with typical kveik yeast characters, with a finish that's the dryer of the two.
