If you haven’t been to D&K Live, you haven’t lived. The Footscray seafood store is one of Melbourne’s best places* to buy fresh fish, live crabs, sea snails, and oysters that are still submerged in water. Naturally, it’s a place well known by the suburb’s Mr West and Hop Nation, so when the former turned seven, they sought out some of those oysters.
When they got them, they brewed Saltwater, an oyster black lager named after a local term for the mighty Maribyrnong River. Those freshly shucked molluscs bring a salty edge to the beer, which also contains a richer caramel or brown sugar side, along with a firm roasted bitterness. Having said that, it’s still quite a dry lager, and much like D&K, if you’re not returning again and again, then there’s no saving you.
