At Coolum Beer, they take approachability seriously for a bunch of reasons: warm climate, beach culture, people often needing to drive to and from the taproom, popular for knock-off drinks and long sessions… all in all, this isn’t the place you come for flight of palate-wrecking boozy hop monsters.
That doesn’t mean they don’t know how to make a bangin’ IPA, though. Head brewer Jesse spends a lot of his time thinking about IPAs, and loves playing around with flavoursome hop combos. Which leads to beers like 8 Day Week.
This IPA is clearly styled after a West Coast, but it’s a very Aussie version of the style. There’s definitely resinous pine in there, but it’s alongside modern aromas and flavours like beautiful stonefruit and juicy citrus, with some residual sweetness keeping the toned-down bitterness in check. The result is an IPA that hits the sweet spot between being approachable and being awash with vivid flavour – an IPA for everyone.
