I think most people who open a small brewery feel, at some point or other, that they’ve gotten themselves into a bit of a pickle. This collab by Noosa Hinterland Brewing and Morts Brewing – “the two little fellas on the Sunny Coast” – celebrates just such a fact.
Before we get into the beer, in case you were wondering, the two dills are John Tynan and Jamie Saville, the owners / head brewers / janitors of Noosa Hinterland and Morts respectively. As Jamie puts it: “You’ve got to be a bit of a dill to go all in on a true microbrewery, but we wouldn’t have it any other way!”
They decided to do the small brewery thing of making a beer that no one else could make – in this case, a gose that incorporates the juice from Noosa Hinterland’s house-made pickles.
The tasting notes from the brewers read: “‘Two Dills offers a briny, tart flavour profile with hints of mustard, coriander and dill, making it a treat for pickle lovers and sour beer fans alike. This Gose balances its sour and salty elements, with a herbal finish that’s both light and easy-drinking.”
Also in small brewery fashion, this beer is a tap-only release that will be available at both brewery’s taprooms and nowhere else.
