Every year, in anticipation of the heat of South Australia’s summer, the Wheaty Brewing Corps tweak their popular Black Lime Gose recipe, adding a different tropical fruit to the traditional gose base (including coriander seeds and Pink Murray salt). The Can Can saw them add bucketloads of passionfruit juice to the secondary ferment, where it joins The Menace – the evolving house mixed culture that brings together yeasts and bacteria from many of their collaborators' beers, with some bugs that are yet to be identified. The first batch disappeared so fast they had to scramble to get another one into tank.
A few 4.8 percent ABV Can Cans may get you up and dancing like you're on the Moulin Rouge but not because of the alcohol content, instead from the fruity, sour zing that gets the taste buds jumping. Fresh passionfruit vibes fill the entire bar area as your glass is being poured, with the juice not only lifting the aroma and flavours to new heights but also bringing down the pH to offer a decent, fruity acidic sourness, while healing summertime sore throats and head colds with its Vitamin C overload [Medical benefits of Can Can not scientifically confirmed – Editor].
