You could spend 20,000 words arguing over the perfect beer to enjoy with a gigantic bowl of Phở. A light lager to cut through the fresh chillies? Maybe a Belgian wit to play the perfect roommate to coriander and other spices? I don’t have 20,000 words so let me just say that Nice Guys’ Cold IPA does a pretty damn good job of fitting in with any bowl of beautiful noodle soup.
It’s a fortunate (or maybe perfectly-designed) state of affairs thanks to the brewery sitting in the heart of one of Melbourne’s best spots for Phở: Victoria Street in Richmond. Brewed with a whole load of New Zealand hops, it provides substantial levels of peach, nectarine, lime and touch of bubblegum which help drive the intensity of the bowl’s deeply-flavoured soup. But, while there’s an intensity to those hops, a snappy, lean and bitter finish all leave you wanting more.
