Mosaic Smash (Single Malt and Single Hop) is Beerland's tribute to Mosaic hops, here supported by Maris Otter malts from the UK. Head brewer Andrew likes to get the most out of his hops and here went with massive additions in both the kettle and fermenter at a total rate of 13grams per litre. That's a load of Mosaic hops!

This DDH-ing creates aromas of passionfruit and pineapple, with sweet orange peel one of the main flavours coming through. In typical American IPA fashion, Mosaic Smash has a dank bitter finish albeit with the sweetness from the Maris Otter balancing it nicely, making for an old meets new school IPA. UPDATE: Mosaic Smash won a best IPA gong at the 2022 Perth Royal Beer Awards on June 10.

Also fresh from Beerland is their WA Beer Week collab with Two Birds. Andrew and Brandon from Beerland teamed up with Danielle Allen and Jeremy Bird form Two Birds to create a beer celebrating the fact the latter were taking up residence at Northbridge Brewing Co for the month of June. Birds of Paradise juicy sour was the result, coming jam-packed with sunshine and goodness.

A total of 100kg of passionfruit, orange and guava juice/purée were added late in the ferment, which works out to be around 80 grams per litre, and the result is tropical juice aromas bursting from the glass, despite the fact there were no dry-hop additions. Andrew opted to use the Philly Sour yeast strain, which added pithy meringue like flavours and boosted the juiciness of the beer, all leading into a bright, fruity finish.
