Simon Says Tangelo Sour is a great example of Common People’s values intertwining - relationships with the people in their community, using local produce, and brewing high quality beer. It’s an intensely sour beer pumping with fresh tangelo flavour, made entirely with fruit from brewery regular Simon’s tree.
Believe it or not, it takes a bit of work to process 100 kilos of tangelos. Everyone gets involved at the brewery, zesting until their hands are cramped and juicing until their arms are about to drop off. But eventually they get what they need, and can throw all this fresh tangelo into the fermenter with the base beer, which has been soured with the Lactobacillus helveticus strain, known for its strong citrus acidity.
By the time they’re done, they have a beer with a dense marshmallow head that splashes its citric tang all over your tongue from start to finish.
