Midway through 2021, the teams at Margaret River Brewhouse and The DTC explored the then newly-named Talus hop via a clean and very drinkable IPA. Although pleased with the results, they figured there was unrealised potential to be mined within this characterful neomexicanus variety. So, vowing to see just how far they could push Talus in an IPA, they set out to prove how much was left in the tank in this single hop IIPA.
The answer is: a fair bit more!
Pouring clear amber – can this really be 2012?!? – the now imperial version immediately offers maximum Talus with huge pink grapefruit and Grandma’s potpourri / rose aromas that persist, before things shift more marmalade-like on the tongue, with a weird yet pleasing neo-mex floral resin joining on the palate. Oh, it’s old school bitter AF too, almost wilfully so, making sure there's no unfinished business this time around.
