Fancy a bit of history? Years ago, Nic Sandery was brewing at Stone & Wood alongside his mate, Tom O'Reilly. Today, the two brewers have found new homes at Molly Rose and Loophole respectively, where they spend much of their time crafting delicious mixed-culture beers and blending them with fruit.
But that's not how Sour Tom originated, instead, this strawberry beer began as an accident when some grains soured and to keep Tom happy, Nic introduced fresh strawberries to create a zesty sour. Fast forward a few years, and the beer became part of Nic's opening line-up when he launched his fledgling operation with the Foundation Series.
Now in spring 2024, the barrel-fermented sour has returned, which seems fitting considering the brewery calls it 'sunshine in a can'. And who are we to disagree? Firstly, there's a distinct fresh strawberry aroma from the pink-hued beer and that berries carries through on the palate. Joining in is a textural mouthfeel and a lingering sourness that's intertwined with an oaky character and some light funk that remains light enough to ensure this beer remains light and refreshing and perfect for, well, it's perfect for spring.
