Although Mash have been brewing with reclaimed food waste ingredients for some time, it's this Fruit Toast Hefeweizen that marks the official start of their Renewable Series. And what better product to highlight given bread is Australia’s most wasted food item: half of every load is estimated to end up in landfill, which is a quite staggering thought.
Here, 100 kilograms of fruit toast otherwise destined for landfill – plus rescued bananas – were instead diverted into a beer which could easily pass for liquid breakfast. Banana aromas – both from fruit and yeast-derived esters – lead into sweet, creamy malt with subtle spice from the yeast mingling with fruit toast cinnamon and a light, peppery warmth. Raisins and plump sultanas also feature as candied citrus peel adds freshness and lifts the palate late on.
It’s quite a ride and one which saw Mash claim a high commendation for innovation at the 2023 WasteSorted WA Awards. And, as an added gesture, 50 cents from every can sold goes to OzHarvest WA, supporting their efforts to reduce food waste and help those facing food insecurity.
